
Bacon-Spinach
Strata Assemble this creamy casserole the night before and chill, then pop it into the oven in the morning
Coat 13"x9" baking dish with cooking spray. In large nonstick skillet, cook bacon over medium-high heat, stirring frequently, until crisp, about 5 min.
Squeeze any remaining water out of spinach; add to skillet. Cook, stirring occasionally until heated through, about 2 min. Season with 1⁄4 tsp. salt and 1⁄8 tsp. pepper.
Arrange half cubed bread in bottom of baking dish. Top with half of spinach mixture. Repeat layering once. In large bowl, Whisk together milk and eggs; season with remaining 1⁄4 tsp. salt and 1⁄8 tsp. pepper. Pour over strata. Cover and chill at least 2 hrs. or up to overnight.
Heat oven to 350°F. Place thin slices of tomatoes on top of strata. Bake until golden around edges and set in center, about 40 min. If desired, garnish with fresh parsley sprigs.
